An interesting question, Marco! I would think that most practicing
scientists and philosophers of science would choose "A", "all our knowledge
must conform to objects."

I wonder, however, whether one movement within the philosophy of science,
social constructionism about science, bear interesting historical and
conceptual relations to option "B" ("objects must conform to our
knowledge"). I haven't thought about this deeply, but I suspect that this
would be a good place to look if you are interested in modern-day folks who
might take option B seriously.
